Vanilla Frosting
Non-Dairy

1 Cup Shortening (suggested: Spectrum Brand)
Pinch of Salt
3 Cups Powdered Sugar
3 Tbsp Rice Milk (or non-dairy alternative)
1 Tsp GF Vanilla Extract

  1. In a medium sized bowl or electric mixer bowl cream shortening.
  2. Add salt, powdered sugar in 3 additions creaming after each addition.
  3. Add rice milk, and vanilla. Beat on medium speed until smooth (about 5 minutes)

 

Chocolate Frosting
Non-Dairy

1 1/2 Cups Dairy Free Chocolate Chips (suggested: Enjoy Life Brand)
1/4 Cup Unsweetened Cocoa Powder
1/4 Cup Hot Water
1 Cup Shortening (suggested: Spectrum Brand)
1/4 Cup Powdered Sugar
1/8 tsp of Salt
1 Tbsp Rice Milk (or non-dairy alternative)

  1. Melt chocolate chips in a microwave safe bowl (stir every 30 seconds)
  2. Combine cocoa powder and hot water in a small bowl. Stir until smooth
  3. In a medium sized bowl or electric mixer bowl combine shortening, powdered sugar, salt, and rice milk. Beat for about 2 minutes.
  4. Add melted chocolate and beat for 3 minutes. Scrape sides of bowl and add cocoa mixture. Beat for 1 minute.
